Ginger Chicken Breasts With Flair
Serves 4
4 boneless, skinless chicken breasts
1 tsp grated ginger 5 mL
1 large onion, diced
¼ cup brandy 60 mL
¼ cup dry white wine 60 mL
¼ cup chicken broth 60 mL
¼ tsp white pepper 1 mL
1 tsp chopped fresh thyme (¼ tsp/1 mL dry) 5 mL
½ cup milk 125 mL
2 tsp cornstarch 10 mL
Preparation:
1. Spray large skillet with cooking spray and heat over medium-high heat.
2. Add ginger and chicken breasts and cook until lightly browned; move chicken to one side.
3. Add onion and saute until it is transparent. Add brandy and warm for several seconds, then ignite using a long matchstick. When flame dies, add broth, wine and pepper.
4. Cover and simmer 20 minutes or until a meat thermometer inserted into the chicken reads 165°F (74°C). Stir in thyme. Whisk cornstarch into milk and add to pan. Cook, stirring constantly, until thickened.
